Cheesy Salsa Chicken Quesadilla Bake

2 cups cooked chicken, shredded

1 cup salsa (mild, medium, or hot depending on preference)

2 cups shredded cheese (cheddar or Mexican blend)

8 large flour tortillas

1 small red onion, diced

1 bell pepper, diced (any color)

1 teaspoon garlic powder

1 teaspoon cumin

1 teaspoon chili powder

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sour cream, for serving

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a large mixing bowl, combine the shredded chicken, salsa, half of the cheese (1 cup), diced red onion, diced bell pepper, garlic powder, cumin, chili powder, salt, and pepper. Mix well until all ingredients are evenly coated.

      Assemble the Quesadillas: Lay out 4 of the flour tortillas on a clean surface. Evenly distribute the chicken and salsa mixture over each tortilla. Top each with another tortilla to create quesadillas.

        Grease the Baking Dish: Lightly grease a large baking dish (approximately 9x13 inches) with olive oil. Place the quesadillas in the dish, stacking them slightly if needed.

          Bake: Sprinkle the remaining cheese (1 cup) evenly over the top of the stacked quesadillas. Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly and the tortillas are golden.

            Cool and Slice: Remove from the oven and allow to cool for a few minutes. Slice the stacked quesadillas into wedges with a sharp knife.

              Garnish and Serve: Transfer the sliced quesadilla wedges to a serving platter. Garnish with fresh cilantro and serve with sour cream on the side for dipping.
