2 cups uncooked penne pasta

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 zucchini, diced

1 cup cherry tomatoes, halved

1 cup spinach, roughly chopped

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

2 cups marinara sauce

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, about 9-11 minutes. Drain and set aside.

      Sauté Veggies: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

        Add More Veggies: Incorporate the red bell pepper, zucchini, and cherry tomatoes into the skillet. Season with dried Italian herbs, salt, and pepper. Cook for about 5-7 minutes until the veggies are slightly softened.

          Mix in Spinach: Add the chopped spinach to the skillet and stir until it wilts, about 1-2 minutes. Remove the skillet from heat.

            Combine Ingredients: In a large mixing bowl, combine the cooked pasta, sautéed vegetables, marinara sauce, and half of the mozzarella cheese. Mix well until everything is evenly coated.

              Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13 inch baking dish. Spread it out evenly.

                Top It Off: Sprinkle the remaining mozzarella cheese and the grated Parmesan cheese over the top of the pasta bake.
