Ingredients

8 oz (225g) spaghetti or any pasta of your choice

1 pint (300g) cherry tomatoes, halved

1 tbsp olive oil

2 cloves garlic, minced

1/2 tsp red pepper flakes (adjust for spice preference)

Salt and pepper, to taste

1/4 cup (60ml) fresh basil, chopped

1 ball (about 8 oz/225g) burrata cheese

Zest of 1 lemon

1 tbsp balsamic glaze (for drizzling)

Fresh basil leaves, for garnish

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the pasta.

Sauté the Cherry Tomatoes: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 30 seconds until fragrant.

Add Tomatoes: Stir in the halved cherry tomatoes and season with salt and pepper. Cook for 5-7 minutes, or until the tomatoes begin to blister and soften, stirring occasionally.

Combine Pasta and Sauce: Add the cooked pasta directly into the skillet with the cherry tomatoes. Toss to combine, adding reserved pasta water a little at a time until the desired sauce consistency is reached.

Incorporate Burrata: Tear the burrata into pieces and gently fold it into the pasta, allowing the creamy inside to mix with the sauce. Add the fresh basil and lemon zest, mixing until everything is well combined.

Serve: Plate the pasta and finish with a drizzle of balsamic glaze and extra basil leaves for garnish. Enjoy your creation while the burrata is still creamy!
