Ingredients

1 lb pizza dough (store-bought or homemade)

2 cups cherry tomatoes, halved

1 cup fresh basil leaves

1/2 cup grated Parmesan cheese

1/2 cup olive oil

2 cloves garlic, minced

1/4 cup pine nuts (toasted)

Salt and pepper to taste

1 cup mozzarella cheese, shredded

1/2 teaspoon red pepper flakes (optional)

Fresh basil leaves for garnish

Instructions

Preheat the Oven: Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat up.

Prepare the Pesto: In a food processor, combine the fresh basil leaves, toasted pine nuts, minced garlic, grated Parmesan cheese, and olive oil. Blend until smooth. Season with salt and pepper to taste. Set aside.

Prepare the Tomato Topping: In a mixing bowl, toss the halved cherry tomatoes with a splash of olive oil, salt, pepper, and if desired, red pepper flakes. Let them marinate for about 10 minutes.

Roll Out the Dough: On a floured surface, roll out the pizza dough to your desired thickness and shape. If you want a crispy crust, opt for a thinner pizza.

Assemble the Pizza: Transfer the rolled-out dough to a pizza peel (or baking sheet if not using a stone). Spread an even layer of basil pesto over the base of the dough, leaving about an inch of crust around the edge.

Add the Toppings: Evenly distribute the marinated cherry tomatoes over the pesto, then sprinkle the shredded mozzarella cheese on top.

Bake the Pizza: Slide the pizza onto the preheated pizza stone (or place the baking sheet in the oven). Bake for 10-12 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.

Garnish and Serve: Once out of the oven, let the pizza cool for a minute. Garnish with fresh basil leaves for extra flavor and color. Slice and serve immediately.

Enjoy: Pair your pizza with a fresh salad or a glass of your favorite beverage for a delightful meal!
