Chewy Tahini Oat Cookies

1 cup rolled oats

1/2 cup tahini

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1/4 cup honey or maple syrup

1/2 cup almond flour (or any nut flour)

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon vanilla extract

1/2 teaspoon cinnamon (optional)

1/2 cup dark chocolate chips or chopped nuts (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Wet Ingredients: In a large mixing bowl, combine tahini, brown sugar, granulated sugar, honey (or maple syrup), and vanilla extract. Whisk until smooth and creamy.

      Combine Dry Ingredients: In another bowl, mix together the rolled oats, almond flour, baking soda, salt, and cinnamon (if using). Stir until combined.

        Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until a thick dough forms. If desired, fold in chocolate chips or nuts for added texture and flavor.

          Form Cookies: Using a tablespoon or cookie scoop, portion out dough onto the prepared baking sheet, leaving space between each cookie as they will spread slightly.

            Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. The centers may look slightly underbaked, but they will firm up as they cool.

              Cool: Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
