Chicken Parmesan with Marinara and Mozzarella

2 large boneless, skinless chicken breasts

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably Italian-style)

1 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper to taste

2 cups marinara sauce (store-bought or homemade)

1 ½ cups shredded mozzarella cheese

Fresh basil leaves for garnish (optional)

Olive oil for frying

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Chicken: If the chicken breasts are thick, slice them in half horizontally to create thinner cutlets. Place them in a plastic bag and gently pound with a meat tenderizer until they are about ½ inch thick for even cooking.

      Set Up Your Breading Station: In one shallow bowl, place the flour seasoned with salt and pepper. In a second bowl, whisk the eggs. In a third bowl, combine the breadcrumbs, grated Parmesan, garlic powder, oregano, and a pinch of salt and pepper.

        Bread the Chicken: Dredge each chicken cutlet first in the flour, shaking off excess, then dip into the egg mixture, allowing excess to drip off. Finally, coat the cutlet in the breadcrumb mixture, pressing gently to adhere.

          Fry the Chicken: In a large skillet over medium heat, add enough olive oil to cover the bottom of the pan (about 1/4 inch). Once the oil is hot, carefully place the breaded chicken cutlets in the skillet. Fry for about 4-5 minutes per side, or until golden brown and cooked through. Transfer the chicken to a paper towel-lined plate to drain excess oil.

            Layer with Sauce and Cheese: In a baking dish, spread a thin layer of marinara sauce on the bottom. Place the fried chicken cutlets on top. Spoon more marinara sauce over each cutlet and then sprinkle generously with shredded mozzarella cheese.

              Bake: Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the mozzarella is bubbly and golden brown.

                Garnish and Serve: Remove from the oven and let it rest for a few minutes. Garnish with fresh basil leaves if desired. Serve with pasta, a salad, or garlic bread for a complete meal.
