Chicken Wraps with Garlic and Cheese

2 boneless, skinless chicken breasts

1 tablespoon olive oil

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper, to taste

1 cup shredded mozzarella cheese

4 large flour tortillas

1 cup fresh spinach leaves

1 medium tomato, diced

1/4 cup ranch dressing (or your favorite sauce)

Optional: sliced jalapeños for a spicy kick

Marinate the Chicken: In a bowl, combine olive oil, minced garlic, smoked paprika, oregano, salt, and pepper. Add the chicken breasts, ensuring they are well-coated. Let it marinate for at least 15 minutes at room temperature or up to 2 hours in the refrigerator for more flavor.

    Cook the Chicken: Preheat a grill or skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and they are nicely browned. Remove the chicken from the heat and let it rest for a few minutes before slicing it into strips.

      Assemble the Wraps: Lay out the flour tortillas on a clean surface. Evenly distribute the cooked chicken strips, shredded mozzarella cheese, fresh spinach, and diced tomatoes onto each tortilla. Drizzle ranch dressing over the fillings, and add jalapeños if desired.

        Wrap It Up: Fold in the sides of each tortilla, then roll from the bottom up to create a tight wrap. Ensure all the ingredients are sealed inside.

          Toast the Wraps: If desired, you can toast the wraps in a skillet with a little cooking spray or olive oil, cooking for about 2-3 minutes on each side until the tortillas are golden and the cheese is melted.

            Serve: Cut the wraps in half diagonally and serve warm with extra ranch dressing on the side for dipping.
