6 slices of crusty bread (like sourdough or baguette)

6 large eggs

1 cup shredded cheddar cheese

1 cup canned chili (preferably vegetarian or turkey for lighter option)

1/2 cup diced bell peppers (any color)

1/3 cup chopped green onions

1 tsp smoked paprika

1/2 tsp garlic powder

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Bread: Using a rolling pin, flatten each slice of bread to about 1/4 inch thick. This will help them fit into your muffin tin.

      Form Toast Cups: Lightly grease a muffin tin. Press each flattened bread slice into the muffin tin, forming a cup shape, ensuring it adheres to the sides.

        Build the Base: Spoon a generous tablespoon of chili into each bread cup, filling them about halfway. Sprinkle with diced bell peppers, ensuring they are evenly distributed.

          Add Egg: Crack an egg into each chili-filled toast cup, being careful not to break the yolk.
