14 oz (400g) firm tofu, drained and pressed

4 tablespoons soy sauce

2 tablespoons sesame oil

1 tablespoon rice vinegar

3 cloves garlic, minced

1 tablespoon red chili flakes (adjust to taste)

2 tablespoons maple syrup or honey

1 tablespoon fresh ginger, grated

1 bell pepper (any color), cut into bite-sized pieces

1 red onion, cut into bite-sized chunks

1 zucchini, sliced into thick rounds

Instructions
 

Prepare the Marinade: In a bowl, whisk together the soy sauce, sesame oil, rice vinegar, minced garlic, red chili flakes, maple syrup, and grated ginger until well combined.

    Marinate the Tofu: Cut the pressed tofu into 1-inch cubes. Gently toss the tofu cubes in the marinade, ensuring each piece is well coated. Cover and let marinate for at least 30 minutes in the refrigerator (or up to 2 hours for more flavor).

      Prepare the Vegetables: While the tofu is marinating, chop the bell pepper, red onion, and zucchini into similar-sized pieces that can easily be skewered.

        Soak the Skewers: If using wooden skewers, soak them in water for about 30 minutes to prevent burning on the grill.

          Assemble the Skewers: Once the tofu has marinated, thread the tofu and vegetables alternately onto the skewers. Start with a piece of bell pepper, then tofu, followed by a piece of onion, and then zucchini. Repeat until the skewer is filled, leaving some space at the ends for handling.

            Preheat the Grill: Preheat your grill to medium-high heat (around 400°F or 200°C).

              Grill the Skewers: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally. The tofu should be golden and slightly charred, and the vegetables should be tender but still crisp.

                Serve: Remove the skewers from the grill and let them cool for a minute before serving. Garnish with fresh cilantro or chopped green onions if desired.
