8 rice paper wrappers

1 block (14 oz) firm tofu, drained and pressed

2 tablespoons soy sauce

1 tablespoon lime juice

1 teaspoon chili paste (adjust based on your spice preference)

1 tablespoon sesame oil

1 medium cucumber, julienned

1 large carrot, julienned

1 bell pepper (red or yellow), julienned

1 cup fresh mint leaves

1 cup fresh cilantro leaves

1 avocado, sliced

1/4 cup roasted peanuts, crushed (optional)

Sweet chili sauce or peanut sauce for dipping

Instructions
 

Prepare the tofu: Slice the pressed tofu into thin strips (about 1/2 inch thick). In a bowl, mix soy sauce, lime juice, and chili paste. Marinate the tofu strips in the mixture for at least 15 minutes.

    Cook the tofu: In a non-stick skillet, heat the sesame oil over medium heat. Add the marinated tofu strips and cook for 4-5 minutes on each side until golden brown and slightly crispy. Remove from heat and let it cool.

      Prepare vegetables: While the tofu is cooling, prepare the fresh veggies. Use a vegetable peeler to create long strips from the carrot and julienne the cucumber and bell pepper.

        Soak rice paper: Fill a large shallow dish or bowl with warm water. Take one rice paper wrapper and submerge it in the warm water for about 15-20 seconds until softened. Carefully remove and place it flat on a clean surface.

          Assemble rolls: Start layering your ingredients on the lower third of the rice paper. Begin with a few strips of marinated tofu, followed by cucumber, carrot, bell pepper, fresh mint, cilantro, avocado slices, and a sprinkle of crushed peanuts if desired.

            Roll it up: Fold the lower edge over the filling, then fold in the sides before rolling it up tightly from the bottom to the top. Make sure to tuck in the sides as you roll for a neat finish. Repeat with the remaining rice paper, tofu, and veggies.
