Chilled Chicken Pasta Salad with Italian Dressing

2 cups rotini or fusilli pasta

1 cup cooked and shredded chicken breast (preferably grilled)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/2 cup black olives, sliced

1/4 cup red onion, finely chopped

1/2 cup crumbled feta cheese

1/4 cup fresh basil, chopped

1/2 cup Italian dressing (store-bought or homemade)

Salt and pepper to taste

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini or fusilli pasta and cook according to package instructions until al dente. Drain the pasta and rinse it under cold water to cool it down quickly.

    Prepare the Ingredients: While the pasta is cooking, chop the cherry tomatoes, cucumber, red bell pepper, and red onion. Set aside.

      Combine Chicken and Veggies: In a large bowl, combine the cooked and shredded chicken, chopped vegetables (cherry tomatoes, cucumber, red bell pepper, black olives, and red onion), and cooled pasta.

        Add Dressing: Pour the Italian dressing over the pasta and chicken mixture. Toss everything gently to combine and coat all the ingredients evenly.

          Season: Add crumbled feta cheese and fresh basil to the salad. Season with salt and pepper to taste, then toss again to incorporate.

            Chill: Cover the salad with plastic wrap or transfer it to an airtight container. Refrigerate for at least 30 minutes to allow the flavors to meld together.
