1 tablespoon cornstarch or tapioca starch

Pinch of salt

1 pre-made pie crust (store-bought or homemade)

1 egg (for egg wash)

1 tablespoon milk (for egg wash)

Fresh mint leaves, for garnish

Prepare the Peaches: In a large bowl, combine sliced peaches with lemon juice, honey or maple syrup, vanilla extract, cornstarch, cinnamon, and a pinch of salt. Gently toss to coat the peaches evenly and let them sit for about 10 minutes. This will allow the flavors to meld and the juices to accumulate.

    Roll Out the Dough: Preheat the refrigerator. On a floured surface, roll out the pie crust into a rough circle, about 12 inches in diameter. Transfer the rolled dough onto a parchment-lined baking sheet.
