Ingredients

1 can (15 oz) chickpeas, rinsed and drained

1 medium cucumber, diced

1 bell pepper (any color), diced

1 small red onion, finely chopped

1 cup cherry tomatoes, halved

2 cups vegetable broth (preferably low-sodium)

1/4 cup fresh lemon juice (about 1-2 lemons)

2 tablespoons olive oil

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley or cilantro, for garnish

Optional: 1 avocado, diced, for topping

Instructions

In a large mixing bowl, combine the diced cucumber, bell pepper, red onion, and cherry tomatoes. Toss gently to mix the veggies evenly.

In a blender or food processor, add the rinsed chickpeas, vegetable broth, lemon juice, olive oil, ground cumin, smoked paprika, salt, and pepper. Blend until smooth and creamy, but retain a bit of texture if you like some chunkiness.

Pour the blended chickpea mixture over the chopped vegetables in the mixing bowl. Stir well to combine all ingredients. Taste the soup and adjust seasoning as needed, adding more salt, pepper, or lemon juice according to preference.

Cover the mixing bowl with plastic wrap or transfer the mixture to an airtight container and chill in the refrigerator for at least 1 hour, allowing the flavors to meld.

Once chilled, serve the soup in bowls. Top with diced avocado and a sprinkle of fresh parsley or cilantro for added freshness and flavor. Enjoy your chilled soup!
