Chilled Shrimp & Avocado Salad

1 pound large shrimp, peeled and deveined

2 ripe avocados, diced

1 cup cherry tomatoes, halved

½ small red onion, finely chopped

1 cucumber, diced

¼ cup fresh cilantro, chopped

1 lime, juiced

3 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper to taste

1 tablespoon honey (optional)

Mixed greens or lettuce for serving

Instructions
 

Prepare the Shrimp: In a pot of boiling salted water, add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Drain and immediately place the shrimp in an ice bath to stop the cooking process. Once chilled, drain again and set aside.

    Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, garlic powder, salt, pepper, and honey if using. Adjust seasoning to taste.

      Combine Ingredients: In a large mixing bowl, gently toss the cooked shrimp, diced avocados, cherry tomatoes, red onion, cucumber, and cilantro.

        Dress the Salad: Pour the dressing over the salad mixture and gently toss until everything is well coated. Be careful not to mash the avocado.

          Serve: Line a serving platter with mixed greens or lettuce. Spoon the shrimp and avocado mixture over the greens. Garnish with additional cilantro if desired.

            Chill: For optimal flavor, refrigerate the salad for at least 30 minutes before serving, allowing the flavors to meld together.
