4 ears of fresh corn, husked

1/4 cup mayonnaise

2 tablespoons chipotle peppers in adobo sauce, minced

1 lime, juiced and zested

1/4 cup Cotija cheese, crumbled (or feta cheese as a substitute)

2 tablespoons fresh cilantro, chopped

1 teaspoon garlic powder

Salt and pepper to taste

Prep the Corn: Begin by husking the corn and removing all silk strands. Rinse the ears under cool water to remove any residual silk and dirt. Pat dry with a clean kitchen towel.
