1 cup almond butter (smooth or crunchy)

1/2 cup honey or maple syrup

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1 cup rolled oats

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup dark chocolate chips (or dairy-free chips, if preferred)

1/4 cup sliced almonds (optional, for topping)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper, leaving some overhang to make it easy to lift the bars out later.

    Mix Wet Ingredients: In a large mixing bowl, combine the almond butter, honey (or maple syrup), melted coconut oil, and vanilla extract. Stir until smooth and well combined.

      Add Dry Ingredients: In another bowl, combine the rolled oats, baking soda, and salt. Gradually add this dry mixture to the wet mixture, folding until just combined. Avoid over-mixing.

        Incorporate Chocolate Chips: Gently fold in the dark chocolate chips, evenly distributing them throughout the mixture. If using sliced almonds, set them aside for topping.

          Transfer to Baking Dish: Pour the mixture into the prepared baking dish, using a spatula to spread it evenly. If desired, sprinkle sliced almonds on top for added crunch and presentation.

            Bake: Bake in the preheated oven for 20-25 minutes or until the edges are golden brown and a toothpick inserted in the center comes out clean.

              Cool and Cut: Remove from the oven and allow the bars to cool in the pan for about 10 minutes. Use the parchment overhang to lift the bars out onto a cutting board. Let them cool completely before cutting into squares or rectangles.
