Ingredients

For the Brownie Base:

1 cup unsalted butter, melted

2 cups granulated sugar

1 cup brown sugar, packed

4 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1 cup unsweetened cocoa powder

1/2 teaspoon salt

1/2 teaspoon baking powder

For the Cookie Dough Filling:

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/2 cup brown sugar, packed

2 tablespoons milk

1 teaspoon vanilla extract

1 cup all-purpose flour (heat-treated)

1/2 cup semi-sweet chocolate chips

For the Coating:

2 cups semi-sweet chocolate chips

1 teaspoon coconut oil (optional, for smooth melting)

Instructions

Prepare the Brownie Base:

    - Preheat your oven to 350°F (175°C). Grease and line a 9x13-inch baking pan with parchment paper.

      - In a large mixing bowl, combine the melted butter, granulated sugar, and brown sugar. Whisk until smooth.

        - Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

          - In a separate bowl, sift together the flour, cocoa powder, salt, and baking powder. Gradually add this dry mixture to the wet ingredients, stirring until just combined.

            - Pour the brownie batter into the prepared baking pan, spreading it evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Let cool completely.

              Make the Cookie Dough Filling:

                - In a medium bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy.

                  - Add the milk and vanilla extract, mixing until well combined.

                    - Gradually add the heat-treated flour, mixing until the dough comes together. Stir in the chocolate chips.

                      Assemble the Bombs:

                        - Once the brownies have cooled, cut them into 1-inch squares. You should have about 24 squares.

                          - Take one brownie square and flatten it slightly. Place about a tablespoon of cookie dough filling on top and then carefully wrap the brownie around the filling, rolling it into a ball. Repeat with remaining brownie squares and cookie dough filling.

                            Coat the Bombs:

                              - In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil (if using). Microwave in 30-second increments, stirring in between, until completely melted and smooth.

                                - Dip each brownie bomb into the melted chocolate, ensuring it's fully coated. Place them on a parchment-lined tray.

                                  Set and Serve:

                                    - Let the chocolate coating set at room temperature, or refrigerate for faster results (about 15-20 minutes).

                                      - Once set, serve and enjoy your delicious Chocolate Chip Cookie Dough Brownie Bombs!
