Ingredients

1 cup high-quality dark chocolate (70% cocoa), chopped

1/2 cup heavy cream

1/2 cup unsweetened hazelnut milk

1 teaspoon vanilla extract

1/4 cup powdered sugar

1 cup whipped cream (for folding in)

1/2 cup roasted hazelnuts, chopped (plus extra for garnish)

Pinch of sea salt

6 small dessert cups or glasses

Optional: chocolate shavings for garnish

Instructions

Melt the Chocolate:

In a heatproof bowl, combine the chopped dark chocolate and hazelnut milk. Place the bowl over a pot of simmering water (double boiler method) and melt the chocolate gently, stirring occasionally until smooth. Remove from heat and let cool slightly.

      Whip the Cream:

In a separate bowl, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form. Be careful not to overwhip, as you want it to be light and fluffy.

          Combine Mixtures:

Once the chocolate mixture has cooled slightly, add a pinch of sea salt. Gently fold in one-third of the whipped cream to lighten the chocolate mixture. Then carefully fold in the remaining whipped cream until just combined.

              Add Hazelnuts:

Gently fold in the chopped roasted hazelnuts, ensuring they are evenly distributed throughout the mousse.

                  Chill the Mousse:

Spoon or pipe the mousse into the dessert cups, filling each to about three-quarters full. Cover with plastic wrap and refrigerate for at least 2 hours or until set.

                      Garnish and Serve:

Before serving, top each mousse cup with a dollop of whipped cream and sprinkle with additional chopped roasted hazelnuts. Optionally, garnish with chocolate shavings for an extra touch of elegance.
