2 cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

1 cup buttermilk (or substitute with milk + 1 tablespoon vinegar)

2 large eggs

1 tablespoon baking powder

½ teaspoon baking soda

1 teaspoon cinnamon

¼ teaspoon salt

1 teaspoon vanilla extract

For the Cream Cheese Filling:

8 oz cream cheese, softened

¼ cup powdered sugar

1 teaspoon vanilla extract

For the Cinnamon Sugar Topping:

¼ cup granulated sugar

1 teaspoon cinnamon

2 tablespoons unsalted butter, melted

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it well.

    Prepare the Cream Cheese Filling: In a mixing bowl, combine the softened cream cheese, powdered sugar, and 1 teaspoon of vanilla extract until smooth. Set aside.

      Make the Muffin Batter: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 3-4 minutes.

        Add Wet Ingredients: Beat in the eggs one at a time, followed by the buttermilk and 1 teaspoon of vanilla extract. Mix until fully combined.

          Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, and salt. Gradually add this dry mixture to the wet ingredients, stirring gently until just combined. Be careful not to overmix; some lumps are okay.

            Fill Muffin Liners: Scoop about a tablespoon of muffin batter into each muffin liner. Add a dollop (about a teaspoon) of the cream cheese filling on top of the batter in each liner. Finally, cover the cream cheese with another tablespoon of muffin batter until the liners are about ¾ full.

              Prepare the Cinnamon Sugar Topping: In a small bowl, mix together the granulated sugar and cinnamon. Brush the melted butter over the tops of the muffins and sprinkle with the cinnamon sugar mixture generously.

                Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
