Cinnamon Roll Baked Oats

2 cups rolled oats

2 cups milk (dairy or non-dairy)

1/2 cup Greek yogurt (plain or vanilla)

1/4 cup maple syrup (or honey)

2 tsp baking powder

2 tsp ground cinnamon

1/2 tsp salt

1 tsp vanilla extract

1/4 cup chopped pecans or walnuts (optional)

1/4 cup raisins or dried cranberries (optional)

1/4 cup brown sugar (for the cinnamon swirl)

1 tbsp ground cinnamon (for the cinnamon swirl)

Icing: 1/2 cup powdered sugar + 1-2 tbsp milk

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish or line it with parchment paper.

    Mix Wet Ingredients: In a large mixing bowl, combine the rolled oats, milk, Greek yogurt, maple syrup, baking powder, ground cinnamon, salt, and vanilla extract. Stir until everything is well mixed.

      Prepare the Cinnamon Swirl: In a small bowl, mix together the brown sugar and 1 tbsp ground cinnamon.

        Layer the Oats: Pour half of the oat mixture into the greased baking dish. Evenly sprinkle half of the cinnamon sugar mixture over the oats. If desired, add a layer of chopped nuts or dried fruits at this stage. Pour the remaining oat mixture over the top.

          Top with Cinnamon Sugar: Finish by sprinkling the remaining cinnamon sugar mixture on top of the filled baking dish.

            Bake: Bake in the preheated oven for 25-30 minutes, or until the oats are set and golden brown on top.

              Prepare the Icing: While the oats are baking, whisk together the powdered sugar and milk in a small bowl until smooth. Adjust the consistency by adding more sugar or milk as needed.

                Cool and Drizzle: Once baked, remove the dish from the oven and let it cool for a few minutes. Drizzle the icing over the top while it’s still warm for an irresistible finish.
