Cinnamon Sugar Donut Muffins

1 ½ cups all-purpose flour

½ teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ cup granulated sugar

½ cup brown sugar, packed

½ cup unsalted butter, melted and slightly cooled

2 large eggs

½ cup whole milk

2 teaspoons vanilla extract

¼ cup granulated sugar (for coating)

2 teaspoons ground cinnamon (for coating)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a standard muffin tin or line it with muffin liners.

    In a medium bowl, whisk together flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.

      In a large mixing bowl, combine the granulated sugar, brown sugar, and melted butter. Mix until well combined.

        Add the eggs, one at a time, mixing well after each addition. Then stir in the whole milk and vanilla extract until the mixture is smooth.

          Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined (do not overmix).

            Distribute the batter evenly among the muffin cups, filling them about ¾ full.

              Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

                While the muffins are baking, prepare the cinnamon sugar coating by mixing the granulated sugar and ground cinnamon in a shallow bowl.

                  Once the muffins are done, allow them to cool in the pan for about 5 minutes. Then, carefully remove them from the pan and roll each muffin in the cinnamon sugar mixture until evenly coated.
