Cinnamon Sugar Zucchini Donuts

1 cup finely grated zucchini (about 1 medium zucchini)

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ tsp ground nutmeg

½ cup granulated sugar

¼ cup packed brown sugar

2 large eggs

½ cup vegetable oil

1 tsp vanilla extract

¼ cup milk

Cinnamon Sugar Coating:

½ cup granulated sugar

1 tbsp ground cinnamon

½ cup melted butter (for coating)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a donut pan or use a silicone mold.

    Prepare Zucchini: Grate the zucchini using a fine grater. Use a clean kitchen towel or cheesecloth to squeeze out any excess moisture. Set aside.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, ground cinnamon, and nutmeg until well combined.

        Mix Wet Ingredients: In another bowl, combine the granulated sugar, brown sugar, eggs, vegetable oil, vanilla extract, and milk. Whisk until the mixture is smooth and creamy.

          Combine Mixtures: Gradually add the dry mixture into the wet mixture, stirring gently until just combined. Do not overmix! Fold in the grated zucchini carefully.

            Fill the Donut Pan: Transfer the donut batter into a piping bag or use a large spoon to fill each donut cavity about ¾ full.

              Bake: Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center comes out clean. Allow the donuts to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

                Cinnamon Sugar Coating: In a small bowl, combine the granulated sugar and ground cinnamon for the coating. While the donuts are still warm, dip each one into the melted butter, then roll it in the cinnamon sugar mixture until fully coated.
