Classic Chicken & Broccoli Stir Fry

2 boneless, skinless chicken breasts, sliced into thin strips

3 cups broccoli florets

1 red bell pepper, sliced

1 cup carrots, julienned

3 cloves garlic, minced

1-inch piece of ginger, grated

2 tablespoons vegetable oil (divided)

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

1/4 cup chicken broth (or water)

1 teaspoon sesame oil

1 teaspoon sugar

Salt and pepper to taste

Cooked jasmine rice or noodles for serving

Sesame seeds and green onions for garnish (optional)

Instructions
 

Prepare the Chicken Marinade: In a medium bowl, combine sliced chicken, soy sauce, oyster sauce, cornstarch, and sugar. Mix well and let it marinate for at least 15 minutes.

    Blanch the Broccoli: Bring a pot of salted water to a boil. Add broccoli florets and cook for about 2 minutes until bright green. Drain and immediately plunge into ice water to stop the cooking process. Set aside.

      Stir-Fry the Chicken: In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated chicken and stir-fry for about 5-7 minutes until the chicken is golden and cooked through. Remove from the pan and set aside.

        Cook the Vegetables: In the same wok, add the remaining tablespoon of vegetable oil. Sauté the minced garlic and grated ginger for about 30 seconds until fragrant. Then, add the red bell pepper and carrots. Stir-fry for about 3-4 minutes until slightly tender.

          Combine Ingredients: Return the cooked chicken to the wok with the vegetables. Add the blanched broccoli and chicken broth. Drizzle with sesame oil, and season with salt and pepper to taste. Stir well to combine all ingredients.

            Thicken the Sauce: Allow the mixture to cook for another 2-3 minutes, stirring frequently until the sauce thickens and coats the chicken and vegetables.

              Serve: Serve the stir fry hot over a bed of jasmine rice or your choice of noodles. Garnish with sesame seeds and chopped green onions, if desired.
