Classic Spaghetti Bolognese Sauce

400g spaghetti

2 tablespoons olive oil

1 large onion, finely chopped

2 garlic cloves, minced

1 carrot, finely diced

1 celery stalk, finely diced

500g ground beef (or a mix of beef and pork for extra flavor)

100ml red wine (optional)

400g can of crushed tomatoes

2 tablespoons tomato paste

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

150ml beef stock

1 tablespoon sugar (to balance acidity)

Fresh basil for garnish

Grated Parmesan cheese for serving

Instructions
 

Cook the Spaghetti: In a large pot, bring salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Sauté the Vegetables: In a large skillet or saucepan, heat olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened and fragrant.

      Brown the Meat: Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it up with a wooden spoon, about 8-10 minutes. Drain excess fat if necessary.

        Add Wine (optional): Pour in the red wine, scraping the bottom of the pan to release any browned bits. Allow it to simmer for about 3-4 minutes, or until nearly evaporated.

          Combine Ingredients: Stir in the crushed tomatoes, tomato paste, dried oregano, dried basil, salt, and pepper. Mix well.

            Simmer the Sauce: Pour in the beef stock and add sugar. Bring the sauce to a boil, then reduce the heat to low and let it simmer uncovered for 30-40 minutes, stirring occasionally. If the sauce thickens too much, add reserved pasta water to reach desired consistency.

              Taste and Adjust: Taste the sauce and adjust seasoning as necessary. If it’s too acidic, add a little more sugar.

                Serve: Serve the Bolognese sauce over the cooked spaghetti. Garnish with fresh basil and a generous sprinkle of grated Parmesan cheese.
