Ingredients

2 ripe avocados

1 can (5 oz) of tuna, drained (preferably in water)

1/4 cup mayonnaise (or Greek yogurt for a healthier option)

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

1/4 cup celery, finely chopped

1/4 cup red onion, finely chopped

2 tablespoons dill pickles, finely chopped

Salt and pepper, to taste

Fresh parsley or cilantro, for garnish

Optional: 1 tablespoon capers, rinsed and chopped

Instructions

Prepare the Avocados: Cut the avocados in half lengthwise and carefully remove the pit. Scoop out a small amount of avocado flesh from each half to create extra space for the tuna salad. Set aside the flesh to mix into the tuna salad if desired.

Make the Tuna Salad: In a medium mixing bowl, combine the drained tuna, mayonnaise, Dijon mustard, lemon juice, celery, red onion, dill pickles, salt, and pepper. If you scooped out some avocado flesh, chop it finely and fold it into the tuna mixture for added creaminess.

Adjust Seasoning: Taste the tuna salad and adjust the seasoning as needed, adding more salt, pepper, or lemon juice to suit your preferences.

Stuff the Avocados: Generously spoon the tuna salad mixture into each avocado half until they are beautifully filled.

Garnish and Serve: Sprinkle chopped fresh parsley or cilantro on top of the stuffed avocados for a pop of color and flavor. Optionally, add chopped capers for an extra briny kick.

Enjoy: Serve chilled or at room temperature as a light lunch, appetizer, or healthy snack.
