Cold Chicken Pasta with Lemon Vinaigrette

8 oz (225g) fusilli pasta

2 cups cooked chicken breast, shredded

1 cup cherry tomatoes, halved

1 cup cucumber, diced

½ cup red bell pepper, diced

½ cup red onion, finely chopped

¼ cup fresh parsley, chopped

¼ cup grated Parmesan cheese

For the Lemon Vinaigrette:

½ cup extra-virgin olive oil

¼ cup fresh lemon juice

1 teaspoon Dijon mustard

1 clove garlic, minced

1 teaspoon honey

Salt and black pepper, to taste

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fusilli pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Vinaigrette: In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, honey, salt, and black pepper until well combined and emulsified. Taste and adjust the seasoning as needed.

      Combine Ingredients: In a large mixing bowl, combine the cooled pasta, shredded chicken, cherry tomatoes, cucumber, red bell pepper, red onion, and chopped parsley.
