Cold Italian Pasta Salad

8 oz (about 225g) of fusilli pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell pepper, diced (any color)

½ cup red onion, finely chopped

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

½ cup fresh parsley, chopped

¼ cup extra-virgin olive oil

2 tbsp red wine vinegar

1 tsp dried oregano

1 tsp garlic powder

Salt and pepper to taste

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fusilli pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool down. Set aside.

    Prepare the Vegetables: While the pasta is cooking, chop the cherry tomatoes, cucumber, bell pepper, and red onion. Place them in a large mixing bowl along with the Kalamata olives and crumbled feta cheese.

      Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, garlic powder, salt, and pepper until well combined.

        Combine Ingredients: Add the cooled pasta to the bowl with the vegetables and cheese. Pour the dressing over the pasta salad. Sprinkle the fresh parsley on top.

          Toss and Chill: Gently toss all the ingredients together until everything is well coated in the dressing. Adjust seasoning if necessary.

            Refrigerate: Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes before serving to allow flavors to meld.
