Cold Marinated Tomato Pasta

12 oz (340g) pasta (preferably farfalle or fusilli)

4 large ripe tomatoes, diced

1/4 cup extra virgin olive oil

2 tablespoons balsamic vinegar

2 cloves garlic, minced

1 teaspoon sea salt (adjust to taste)

Freshly ground black pepper, to taste

1 teaspoon dried oregano

1/4 cup fresh basil leaves, chopped

1/4 cup freshly grated Parmesan cheese (optional)

Zest of 1 lemon

Juice of 1 lemon

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water until cooled. Set aside.

    Prepare the Marinade: In a large bowl, combine the diced tomatoes, olive oil, balsamic vinegar, minced garlic, sea salt, black pepper, and oregano. Mix well to combine and let it sit for 10 minutes to allow the flavors to meld.

      Combine Ingredients: Add the cool pasta to the bowl with the tomato marinade. Toss gently to ensure all the pasta is coated with the dressing and the tomato mixture.

        Add Fresh Herbs and Cheese: Fold in the chopped basil, lemon zest, and lemon juice. If desired, sprinkle in the grated Parmesan cheese and toss gently once more.

          Chill: Cover the bowl with plastic wrap or transfer the pasta to an airtight container. Refrigerate for at least one hour to allow the flavors to develop and the pasta to chill.
