Ingredients
  

2 medium zucchinis (to create zoodles)

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh or frozen)

1 cup black beans, rinsed and drained

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

2 tablespoons olive oil

Zest of 1 lime

Juice of 2 limes

Salt and pepper, to taste

Optional: sliced jalapeño, for heat

Optional: tortilla chips or crushed tortilla chips for topping

Instructions
 

Prepare the Zoodles: Using a spiralizer, make zoodles from the zucchinis. If you don’t have a spiralizer, you can use a vegetable peeler to create long strips. Once done, pat the zoodles dry with a paper towel to remove excess moisture.

    Make the Avocado Dressing: In a small bowl, mash the ripe avocado with a fork until creamy. Add the lime zest, lime juice, 1 tablespoon of olive oil, salt, and pepper. Mix until smooth. Adjust seasoning to taste.

      Combine the Ingredients: In a large mixing bowl, combine the zoodles, cherry tomatoes, corn, black beans, red onion, and chopped cilantro. Drizzle with the remaining tablespoon of olive oil and mix gently to combine.

        Add the Dressing: Pour the avocado dressing over the zoodle mixture. Toss everything together, ensuring the zoodles and veggies are well-coated with the dressing.

          Serve: Divide the zoodle mixture among bowls. If desired, top with sliced jalapeños for extra heat and enjoy with tortilla chips or crushed tortilla chips for some crunch.
