1 cup cottage cheese (drained)

1 ½ cups all-purpose flour (plus extra for rolling)

1 large egg

1 teaspoon baking powder

½ teaspoon salt

1 tablespoon olive oil (plus more for cooking)

1 teaspoon dried oregano (or any herb of your choice)

Optional toppings: fresh herbs (such as parsley or chives), garlic powder, or your favorite cheese

Prepare the Dough: In a mixing bowl, combine the drained cottage cheese, all-purpose flour, baking powder, salt, olive oil, oregano, and the egg. Mix until the ingredients start to form a dough. It should be slightly sticky but manageable.

    Knead the Dough: Lightly flour a clean surface and transfer the dough onto it. Knead the dough gently for about 2-3 minutes until it becomes smooth. If it's too sticky, add a bit more flour.

      Rest the Dough: Shape the dough into a ball and wrap it in plastic wrap or cover it with a kitchen towel. Allow it to rest for about 15-20 minutes. This helps in making the flatbread more pliable.

        Roll Out the Flatbreads: After resting, divide the dough into 4 equal portions. On a floured surface, roll each portion into a flat circle about ¼ inch thick. Don’t worry if they aren’t perfect circles, rustic shapes add charm!

          Cook the Flatbreads: Heat a skillet or griddle over medium-high heat. Add a drizzle of olive oil. Cook each flatbread for about 2-3 minutes on one side until bubbles form and golden brown spots appear. Flip and cook for another 2-3 minutes. Add more oil as needed for the remaining flatbreads.

            Add Toppings: If you want to elevate your flatbreads, sprinkle some garlic powder or fresh herbs while they’re still warm.
