1 can (15 oz) black-eyed peas, rinsed and drained

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained (or 1.5 cups fresh or frozen corn)

2 medium tomatoes, diced

1 medium red onion, finely chopped

1 bell pepper (red or yellow), diced

1 jalapeño, seeded and minced (optional for spice)

1 avocado, diced

1/4 cup fresh cilantro, chopped

1/4 cup olive oil

1/4 cup red wine vinegar

1 teaspoon cumin

1 teaspoon lime juice

Salt and pepper to taste

Tortilla chips for serving

Instructions
 

In a large mixing bowl, combine the black-eyed peas, black beans, corn, diced tomatoes, red onion, bell pepper, jalapeño, and avocado, ensuring all ingredients are mixed well.

    In a separate bowl, whisk together the olive oil, red wine vinegar, cumin, lime juice, salt, and pepper to create the dressing.

      Pour the dressing over the bean and vegetable mixture and gently toss until all ingredients are evenly coated.

        Fold in the chopped cilantro, adjusting seasoning with more salt and pepper if desired.

          Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld.
