Ingredients

1 can (15 oz) pure pumpkin puree

1 medium onion, diced

2 cloves garlic, minced

3 cups vegetable broth

1 cup coconut milk (canned)

2 tablespoons maple syrup

1 tablespoon pumpkin pie spice

1 teaspoon ground ginger

½ teaspoon salt

½ teaspoon black pepper

2 tablespoons olive oil

Fresh thyme or parsley for garnish (optional)

Instructions

Sauté Aromatics: In a skillet over medium heat, add the olive oil. Once hot, add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Combine Ingredients: In your crockpot, add the sautéed onions and garlic, pumpkin puree, vegetable broth, coconut milk, maple syrup, pumpkin pie spice, ground ginger, salt, and black pepper. Stir well to combine.

Cook: Cover the crockpot with the lid and set it on low for 6 hours or high for 3 hours.

Blend (optional): If you prefer a smoother texture, use an immersion blender directly in the crockpot or carefully transfer the soup in batches to a standard blender. Blend until silky-smooth and return to the crockpot.

Taste and Adjust: After the cooking time is complete, taste the soup. You can add more maple syrup for sweetness or additional spices as desired.

Serve: Ladle the warm soup into bowls. Garnish with fresh thyme or parsley if desired, and enjoy a cozy experience!
