In a large skillet over medium heat, add the Italian sausage. Cook for about 6-8 minutes, breaking it into bite-sized pieces, until browned and cooked through. Remove the sausage from the skillet, leaving the drippings behind.
Add the halved cherry tomatoes, dried oregano, smoked paprika, and season with salt and pepper to taste. Cook for another 3-4 minutes until the tomatoes have softened and juices start to release.
Add the browned sausage back into the skillet, mixing everything well. Fold in the baby spinach and cook for an additional minute until wilted.
Remove from heat and garnish with fresh basil leaves. If desired, sprinkle with grated Parmesan cheese before serving.
