For the Tomato Basil Soup:

2 tablespoons olive oil

1 medium onion, diced

3 garlic cloves, minced

1 can (28 oz) crushed tomatoes (preferably San Marzano)

2 cups vegetable broth

1 teaspoon dried basil

1 teaspoon sugar

Salt and pepper to taste

½ cup heavy cream (optional for creaminess)

Fresh basil leaves for garnish

For the Grilled Cheese:

4 slices of sourdough or whole grain bread

4 slices of sharp cheddar cheese (or your favorite cheese)

2 tablespoons butter

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and cook for about 5-7 minutes until it becomes translucent. Add the minced garlic and sauté for another minute, being careful not to burn it.

    Add Tomatoes and Broth: Pour in the crushed tomatoes and vegetable broth. Stir in the dried basil, sugar, salt, and pepper. Bring the mixture to a simmer and let it cook for about 20 minutes to allow the flavors to meld.

      Blend the Soup: After simmering, use an immersion blender to puree the soup until smooth. If you’re using a regular blender, allow the soup to cool slightly before blending in batches. Return the blended soup to the pot.

        Finish the Soup: If desired, stir in the heavy cream for added richness and creaminess. Taste and adjust seasoning with more salt, pepper, or sugar if necessary. Keep the soup warm over low heat.

          Prepare the Grilled Cheese: While the soup is simmering, butter one side of each slice of bread. Heat a skillet over medium heat. Place two slices of bread butter-side down in the skillet. Place a slice of cheese on each piece of bread.

            Cook the Sandwiches: Top with the remaining two slices of bread, butter-side up. Cook for about 3-4 minutes until golden brown, then carefully flip to cook the other side until golden and the cheese is melted, about 3-4 more minutes.

              Serve: Cut the grilled cheese sandwiches into triangles and serve alongside bowls of the warm tomato basil soup. Garnish the soup with fresh basil leaves.
