Ingredients

2 cans (5 oz each) of tuna in water, drained

1 ripe avocado, peeled and pitted

1 tablespoon Greek yogurt (or mayonnaise)

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 small red onion, finely chopped

1 celery stalk, diced

1 teaspoon garlic powder

Salt and pepper to taste

4 large whole wheat or spinach tortillas

1 cup mixed greens (spinach, arugula, etc.)

1 medium tomato, thinly sliced

Optional: sliced cucumbers, dill, or cilantro for garnish

Instructions

Prepare the Tuna Mix: In a mixing bowl, combine the drained tuna, avocado, Greek yogurt (or mayonnaise), Dijon mustard, and lemon juice. Use a fork to mash the avocado and mix until creamy and well combined.

Add Vegetables: Fold in the finely chopped red onion, diced celery, and garlic powder. Season with salt and pepper to taste. Make sure everything is evenly distributed.

Assemble the Wraps: Lay out each tortilla on a flat surface. Spread a generous amount of the creamy tuna mixture across the center of each tortilla.

Layer the Greens and Tomato: On top of the tuna mixture, add a handful of mixed greens and a few slices of tomato. If you’re using cucumbers, dill, or cilantro, add those as well.

Roll It Up: Carefully fold in the sides of the tortilla, then roll it up from the bottom to the top, securing the contents inside.

Slice and Serve: Use a sharp knife to cut each wrap in half, securing it with toothpicks if needed. Serve immediately or wrap in foil for a delicious on-the-go meal.
