4 bone-in pork chops (about 1 inch thick)

6 slices of thick-cut bacon

1 tablespoon olive oil

Salt and freshly ground black pepper, to taste

1 medium onion, diced

4 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 teaspoon Dijon mustard

1 teaspoon smoked paprika

1/2 teaspoon dried thyme

Fresh parsley, chopped (for garnish)

Prepare the Bacon: In a large skillet over medium heat, cook the bacon until crispy. Remove the bacon from the skillet, leaving the bacon drippings in the pan. Set the bacon aside on a paper towel to drain, and keep the drippings for later.

    Sear the Pork Chops: Pat the pork chops dry with paper towels and season generously with salt and pepper. In the same skillet over medium-high heat, add the olive oil to the bacon drippings. Once hot, add the pork chops and sear on both sides for about 4-5 minutes until they are browned. Remove the chops from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the diced onion and sauté until it becomes translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

        Make the Cream Sauce: Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Reduce the heat to medium and stir in the heavy cream, Dijon mustard, paprika, and dried thyme. Let the sauce simmer gently for about 5 minutes, allowing it to thicken slightly.

          Combine Everything: Return the pork chops to the skillet, nestling them into the creamy sauce. Crumble the crispy bacon on top. Cover the skillet and simmer for an additional 10-15 minutes, or until the pork chops reach an internal temperature of 145°F (63°C) and are cooked through.
