Creamy Broccoli Cheddar Orzo

1 cup orzo pasta

2 cups fresh broccoli florets

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

3 cups vegetable broth

1 cup heavy cream

1 ½ cups sharp cheddar cheese, shredded

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and black pepper to taste

¼ cup grated Parmesan cheese (optional, for garnish)

Fresh parsley, chopped (optional, for garnish)

Instructions
 

Cook the orzo: In a large pot, bring salted water to a boil. Add the orzo and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.

    Blanch the broccoli: In the same pot of boiling water, add the broccoli florets and blanch for about 2-3 minutes until bright green and tender-crisp. Immediately transfer the broccoli to a bowl of ice water to stop cooking. Drain and set aside.

      Sauté the aromatics: In a large skillet over medium heat, add the olive oil. Once heated, add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

        Create the creamy sauce: Pour in the vegetable broth and heavy cream, stirring well. Bring the mixture to a gentle simmer. Add the garlic powder, onion powder, salt, and black pepper. Allow it to simmer for about 5 minutes until slightly thickened.
