Creamy Cajun Pasta with Sausage

8 oz fettuccine pasta

1 lb smoked sausage (andouille or kielbasa), sliced

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

2 cups heavy cream

1 cup chicken broth

1 tablespoon Cajun seasoning

1 teaspoon paprika

1 teaspoon dried thyme

1/2 teaspoon black pepper

Salt to taste

1 cup grated Parmesan cheese

1/4 cup chopped fresh parsley (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving a little pasta water.

    Sauté the Sausage: In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook for about 4-5 minutes until browned. Remove the sausage from the skillet and set aside.

      Cook the Vegetables: In the same skillet, add the diced onion and sauté for 2-3 minutes until translucent. Add the minced garlic, red, and green bell peppers. Cook for an additional 5 minutes, stirring occasionally, until the peppers soften.

        Create the Sauce: Lower the heat and pour in the heavy cream and chicken broth into the skillet. Stir in the Cajun seasoning, paprika, thyme, black pepper, and salt. Let it simmer on low heat for about 5-7 minutes, allowing the sauce to thicken slightly.

          Combine Everything: Add the cooked sausage back into the skillet and mix well. Stir in the grated Parmesan cheese until melted and incorporated into the sauce. If the sauce is too thick, add a splash of the reserved pasta water to reach desired consistency.

            Mix with Pasta: Add the cooked fettuccine to the skillet and gently toss everything together until the pasta is well coated in the creamy Cajun sauce.
