8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tbsp Cajun seasoning

2 tbsp olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup cherry tomatoes, halved

1 cup spinach, fresh

1 tsp paprika

1/2 tsp black pepper

Salt, to taste

1/4 cup grated Parmesan cheese

Fresh parsley, chopped for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.

    Season the Shrimp: In a bowl, toss the shrimp with Cajun seasoning, ensuring they are evenly coated.

      Sauté the Shrimp: In a large skillet, heat olive oil over medium-high heat. Add the seasoned shrimp to the skillet and sauté for about 2-3 minutes on each side or until they are pink and cooked through. Remove shrimp from the skillet and set aside.

        Make the Cream Sauce: In the same skillet, reduce the heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant. Pour in the chicken broth and bring to a simmer.

          Add Cream and Thicken: Lower the heat, and slowly stir in the heavy cream. Add paprika, black pepper, and salt to taste. Allow the sauce to simmer for 3-4 minutes, letting it thicken slightly.

            Combine Ingredients: Add the cherry tomatoes and fresh spinach to the sauce, cooking just until the spinach is wilted. Then, return the shrimp to the skillet and stir gently to combine.
