1 tablespoon olive oil

1 large onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 stalks celery, diced

4 cups vegetable or chicken broth

2 cups heavy cream

1 teaspoon dried thyme

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup assorted cured meats (e.g., salami, prosciutto, chorizo), sliced

1 cup assorted cheeses (e.g., cheddar, brie, goat cheese), cubed or crumbled

1/2 cup olives (green or black), pitted and halved

1/2 cup pickles, sliced

1/4 cup fresh parsley, chopped for garnish

Crusty bread, for serving

Instructions
 

Sauté the Veggies: In a large pot, heat the olive oil over medium heat. Add the diced onion, and cook until translucent, about 5 minutes. Stir in the minced garlic, diced carrots, and celery, cooking until the vegetables are softened, approximately 5-7 minutes.

    Add the Liquids: Pour in the vegetable or chicken broth, bring to a simmer. Then stir in the heavy cream, dried thyme, smoked paprika, salt, and pepper. Let it simmer for about 10 minutes, allowing the flavors to meld.

      Blend the Base: Using an immersion blender, puree the soup until smooth. Alternatively, you can transfer it in batches to a countertop blender. If you prefer a chunkier soup, blend only half of the mixture.

        Incorporate Charcuterie: Return the blended soup to low heat, and stir in the assorted cured meats and cheeses. Allow them to melt slightly and integrate into the soup for another 5 minutes.

          Finish with Accompaniments: Just before serving, stir in the olives and pickles. Adjust seasoning with additional salt and pepper as necessary.
