1 medium head of cauliflower, chopped into florets

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

4 cups vegetable broth or chicken broth

1 cup heavy cream

2 cups sharp cheddar cheese, shredded

1 teaspoon mustard powder

1/2 teaspoon paprika

Salt and pepper to taste

Fresh chives or parsley for garnish (optional)

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, until translucent. Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.

    Cook the Cauliflower: Add the chopped cauliflower florets to the pot and stir to coat with the onion and garlic. Pour in the vegetable or chicken broth, bring to a boil, then reduce the heat and let it simmer for about 15-20 minutes, until the cauliflower is tender.

        Add Cream and Cheddar: Return the blended soup to the pot (if using a countertop blender). Stir in the heavy cream, shredded sharp cheddar cheese, mustard powder, paprika, salt, and pepper. Heat the soup gently over low heat, stirring continuously until the cheese is melted and the soup is creamy.

          Taste and Adjust: Taste your soup and adjust the seasoning with additional salt and pepper if necessary. If you like it a bit thinner, you can add more broth or a splash of water.
