Ingredients

8 ounces fettuccine or pasta of choice

2 tablespoons olive oil

2 boneless, skinless chicken breasts, cut into bite-sized pieces

3 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

Salt and pepper, to taste

1 teaspoon Italian seasoning

1/2 cup frozen peas (optional)

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set it aside.

Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the chopped chicken pieces, season with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes, or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.

Make the Alfredo Sauce: In the same skillet, add the minced garlic and sauté for 1 minute until fragrant. Then pour in the heavy cream and bring it to a gentle simmer. Reduce the heat to low and stir in the Parmesan cheese gradually until melted and creamy. If the sauce is too thick, add a bit of reserved pasta water to achieve your desired consistency.

Combine Everything: Return the cooked chicken to the skillet, adding the drained pasta and frozen peas (if using). Toss everything together until the pasta is well-coated in the sauce. If necessary, add more seasoning to taste.

Serve: Divide the creamy chicken Alfredo pasta into plates, garnish with fresh parsley, and serve immediately.
