Creamy Chicken and Broccoli Rice Skillet

1 lb (450g) boneless, skinless chicken breasts, diced

2 cups broccoli florets (fresh or frozen)

1 cup long-grain white rice, rinsed

3 cups chicken broth

1 cup heavy cream

1 cup shredded cheddar cheese

1 medium onion, finely chopped

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Add diced chicken, season with salt, pepper, and paprika. Cook for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove from skillet and set aside.

    Cook the Aromatics: In the same skillet, add chopped onion and minced garlic. Sauté for about 2-3 minutes until the onion is translucent and aromatic.

      Add Rice and Broth: Stir in the rinsed rice and broccoli florets. Pour in the chicken broth and bring the mixture to a simmer. Cover and cook for about 15 minutes, or until the rice is tender and has absorbed most of the liquid.

        Make It Creamy: Reduce the heat to low. Stir in the heavy cream and shredded cheese until melted and creamy. Adjust seasoning with more salt and pepper, if necessary.

          Combine Chicken and Finish: Return the cooked chicken to the skillet and stir to combine with the rice and creamy sauce. Cook for an additional 2-3 minutes until everything is heated through.

            Serve: Remove from heat, garnish with freshly chopped parsley, and serve warm.
