1 lb (450g) boneless, skinless chicken breasts, diced

2 cups fresh broccoli florets

1 cup cooked rice (white or brown)

1 cup heavy cream

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 medium onion, diced

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with salt, pepper, thyme, and paprika. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove and set aside.

      Sauté Vegetables: In the same skillet, add the diced onion and cook for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1 minute until fragrant.

        Combine Ingredients: Stir in the broccoli florets and cook for another 2-3 minutes until they are just tender. Then add the cooked rice to the skillet, mixing it well with the veggies.

          Add Cream and Cheese: Reduce the heat to low. Pour in the heavy cream and mix until combined. Add the cheddar cheese and Parmesan cheese, stirring until the cheeses are melted and creamy.

            Return Chicken to Skillet: Add the cooked chicken back into the skillet and gently fold until everything is evenly coated in the creamy mixture.

              Bake: Transfer the skillet to the preheated oven. Bake uncovered for about 15-20 minutes, until bubbly and golden on top.
