8 oz (225g) pasta (penne or fettuccine works best)

1 lb (450g) boneless, skinless chicken breasts, diced

2 cups fresh spinach, roughly chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

2 tbsp olive oil

1 tsp Italian seasoning

Salt and pepper, to taste

Red pepper flakes, for garnish (optional)

Fresh basil, for garnish (optional)

Instructions
 

Cook the pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve ½ cup of the pasta water, then drain and set aside.

    Sauté the chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the diced chicken, season with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes or until browned and cooked through, stirring occasionally.

      Add garlic: Once the chicken is cooked, reduce the heat to medium and add the minced garlic to the skillet. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

        Make the creamy sauce: Pour in the heavy cream and bring it to a gentle simmer. Stir in the grated Parmesan cheese, and mix until the cheese is melted and the sauce is smooth. If the sauce is too thick, gradually add some reserved pasta water until you reach your desired consistency.
