Ingredients

12 oz penne pasta

2 tablespoons olive oil

1 lb boneless, skinless chicken breasts, diced

3 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper, to taste

4 cups fresh baby spinach

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

Zest of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta:

    - In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

      Sear the Chicken:

        - In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken and season with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

          Sauté Garlic and Spinach:

            - In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant. Add the fresh spinach and cook until wilted, about 2 minutes.

              Make the Cream Sauce:

                - Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle simmer and let it cook for 2-3 minutes to thicken slightly.

                  Add Chicken and Cheese:

                    - Stir in the cooked chicken and the grated Parmesan cheese until melted and creamy. If the sauce is too thick, add additional chicken broth to reach your desired consistency.

                      Combine with Pasta:

                        - Add the cooked penne pasta to the skillet and gently toss to coat the pasta in the creamy sauce. Fold in the halved cherry tomatoes and lemon zest.

                          Serve:

                            - Taste and adjust seasoning with more salt and pepper, if needed. Serve immediately, garnished with fresh parsley for a pop of color.
