Creamy Chicken and Spinach Skillet Pasta

8 oz (225g) pasta (penne or fusilli works well)

2 tablespoons olive oil

1 pound (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and pepper, to taste

3 cloves garlic, minced

1 teaspoon Italian seasoning

1 cup (240ml) chicken broth

1 cup (240ml) heavy cream

4 cups fresh spinach, roughly chopped

1 cup (100g) grated Parmesan cheese

1 tablespoon lemon juice

Freshly cracked black pepper, for garnish

Fresh parsley, chopped, for garnish (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta cooking water.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Build Flavor: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant. Stir in the Italian seasoning.

        Create the Sauce: Pour in the chicken broth and scrape the bottom of the skillet to release any browned bits. Allow it to simmer for 2-3 minutes, then add the heavy cream. Stir continuously until the mixture is well combined.

          Add Spinach & Cheese: Gradually stir in the chopped spinach and let it wilt down, about 2-3 minutes. Add the grated Parmesan cheese and lemon juice, mixing until the cheese is melted and the sauce is creamy. If the sauce is too thick, add some reserved pasta water to reach desired consistency.

            Combine Everything: Return the cooked chicken to the skillet and add the drained pasta. Toss everything together until the pasta is evenly coated with the creamy sauce and heated through. Adjust seasoning with additional salt and pepper, if needed.
