Creamy Chipotle Pasta Salad

8 oz (225g) pasta (fusilli or penne)

1 cup cherry tomatoes, halved

1 cup corn (fresh or canned)

1/2 cup black beans, rinsed and drained

1/2 cup diced red bell pepper

1/4 cup diced red onion

1 ripe avocado, diced

1/2 cup Greek yogurt

1/4 cup mayonnaise

2-3 tablespoons chipotle in adobo sauce (adjust to taste)

1 tablespoon fresh lime juice

1 teaspoon garlic powder

Salt and pepper to taste

Fresh cilantro, for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool it down. Set aside.

    Prepare the Dressing: In a medium bowl, combine the Greek yogurt, mayonnaise, chipotle in adobo, lime juice, garlic powder, salt, and pepper. Mix well until smooth and creamy. Adjust seasoning or chipotle amount according to your spice preference.

      Combine Ingredients: In a large mixing bowl, add the cooled pasta, cherry tomatoes, corn, black beans, bell pepper, red onion, and avocado. Gently toss everything together to combine.

        Add the Dressing: Pour the creamy chipotle dressing over the pasta salad. Gently fold everything together until the pasta and veggies are well coated in the dressing.
