1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

3 medium carrots, sliced

2 medium stalks celery, diced

4 cups chicken broth (or stock)

1 teaspoon dried thyme

1 teaspoon dried oregano

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

8 oz (225g) egg noodles

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup chopped fresh parsley (for garnish)

Prepare the Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chicken breasts and season with salt and pepper. Cook for about 5-6 minutes per side until browned and cooked through. Remove the chicken from the pot and let it rest for a few minutes before shredding.

    Sauté the Vegetables: In the same pot, add the onions, garlic, carrots, and celery. Cook for 4-5 minutes, stirring occasionally, until the vegetables are slightly softened.
