Ingredients

8 oz fusilli pasta (or your choice of pasta)

1 cup cucumber, diced (about 1 medium cucumber)

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1/2 cup plain Greek yogurt

1/4 cup mayonnaise

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

1 tablespoon lemon juice

1 teaspoon garlic powder

Salt and pepper to taste

Fresh dill sprigs for garnish (optional)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fusilli pasta and cook according to package instructions until al dente. Drain the pasta and rinse under cold water to stop the cooking process. Set aside to cool.

Prepare the Dressing: In a mixing bowl, combine the Greek yogurt, mayonnaise, fresh dill, lemon juice, garlic powder, salt, and pepper. Whisk until smooth and well combined.

Combine the Salad: In a large bowl, add the cooled pasta, diced cucumber, halved cherry tomatoes, and finely chopped red onion. Pour the creamy dressing over the pasta mixture and gently toss until everything is evenly coated.

Chill: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. For best results, let it chill for 1-2 hours.

Serve: Once chilled, give the salad a good stir and adjust seasoning with more salt and pepper if needed. Garnish with fresh dill sprigs before serving.
